Some lovely Kaffir limes in from Colonial Growers in Portugal. We are looking at the different flavours notes in Kaffir lime zest and juice as compares to the lime leaves. The variety of scents in the Kaffir lime zest is astounding and we are looking forward to testing (and maybe tasting?) the extracts.

At Linden Leaf, we are all huge believers in the organic movement and we are pleased to announce that our products have been registered as organic by the Soil Association!
We have finished carrying out the individual distillations and blending for our next production batch and here are the results. At Linden Leaf we put a much higher content of botanicals per bottle than most gin manufacturers: this lets us have the vast range of molecular flavour notes that make our gins special.
Some beautiful lemon thyme in from Kale and Damson today. Lemon thyme is a wonderfully flexible botanical whose flavour notes can range between green herbal flavours and warm citrus depending on extraction parameters.
